The Southwest Chicken Breakfast Wrap.

Ingredients
-1 tbsp extra virgin olive oil
-1 jalapeno pepper, sliced
-1/2 small yellow onion, diced
-1/2 tsp cayenne pepper
-2 oz left-over shredded chicken
-2 medium eggs or equivalent egg substititute
-1 whole grain tortilla wrap
Cilantro Lime Sauce-
-2 tbsp fat free sour cream
-2 tbsp fresh cilantro, chopped
-1/2 lime-juiced

Directions
1. Heat the oil in a frying pan over low heat
2. Add the onion, gently cook until soft
3. Stir in the jalapeno peppers and cook for 1-2 minutes
4. Add shredded chicken
5. Stir to combine and cook until chicken is warm
6.Add cayenne pepper
7. Add 2 medium eggs
8.Cut tortilla wrap in half. Place half of mixture on each tortilla
9.Combine sour cream, cilantro and lime juice, mix well.
10. Spoon 1 tbsp of sauce over egg mixture on each tortilla
11. Roll up each tortilla and serve
